Parmesan Toast Stack
For several years we have been making curried chicken roll-ups (see recipe from November 2018). Since the crust has to be removed prior to the bread being flattened with a rolling pin, it was time to find a way not to waste them.
I decided to experiment with making the crust into a snack. I found a recipe on "Recipetineats" using olive oil, Parmesan cheese, herbs, and salt. We tried them out on the guests during cocktail time and they were a hit! Light and not salty they make a nice accompaniment to a glass of wine or cocktail. Give them a try and let me know what you think.

Ingredients:
1. 6 cups stale bread crusts (enough to spread out over 2 baking trays, preferably stale)
2. 7 - 8 tbsp olive oil
3. 1/3 cup parmesan cheese (grated)
4. 1 1/2 tsp dried thyme
5. 1/2 tsp salt (or to taste)
6. Black pepper
7. Fresh thyme for garnish (optional)
Instructions:.
1. Preheat oven to 350F.
2. Place bread crusts in a bowl. Drizzle with olive oil, tossing the bread
crusts as you go so as to distribute the olive oil as evenly as possible.
3. Add remaining ingredients and toss again.
4. Spread out over 2 baking trays. Do a taste test to make sure it is
seasoned to your liking - adjust if required.
5. Bake for 5 to 8 minutes until golden brown and crunchy (check the
ones in the middle of the tray) changing the pans between the racks
halfway through cooking.
