Strip Steak with Tomato/olive Relish







It's been a very busy couple of weeks having just taken over the Inn from Michael & Patty and learning all the things they've done to make your stays enjoyable experiences.  I'm so fortunate to have their Sous Chef, Jeffrey Grubb step into the Executive Chef position with his 25 years of experience working at the Inn and help me continue the tradition of exceptional cuisine and fine dining. 

With summer here and grilling popular, Jeff introduced a new addition to our many steak preparations with a relish of fresh tomatoes,olives and herbs making a refreshing topping for your steaks.

Ingredients:

2 1 1/2 inch thick New York sirloin steaks

2 Roma tomatoes 

1/2 cup pitted Kalamata olives

1 teaspoon freshly chopped parsley

1/2 teaspoon fresh chopped oregano

2 tablespoons olive oil

salt and pepper to taste

Instructions: 

Halve the tomatoes, seed and dice finely.  Place in a small mixing bowl.  Coarsely chop the olives and add to the bowl with the parsley and oregano.  Toss with the olive oil and season with pepper.

One hour before cooking, set out the steaks and season both sides with salt and pepper.  Drizzle with olive oil before cooking.

Cook the steaks to your taste and let rest for 10 minutes before slicing.  Cut into 10  to 12 slices and divide on plates, top with relish and add a little more olive oil.
