 Caramel Chocolate Chip Cookies

Many of our guests request  “lunch to go” for their trip after staying at the Inn.  We always include some fresh baked cookies and this month’s recipe is for one of the several varieties we make.  These are made in advance in a roll then sliced into cookies and kept in a plastic bag in the freezer.  When we need cookies, we just take however many cookies you want out of the freezer and pop them in the oven.
You can make a batch to have when the grand kids come over or for an afternoon snack for the kids.

Ingredients:
  1. 2 1/4 c flour
  2. 1 tsp baking soda
  3. 1/2 tsp salt
  4. 1 c unsalted butter
  5. 3/4 c sugar
  6. 3/4 c brown sugar
  7. 2 tsp vanilla
  8. 2 eggs
  9. 10 oz dark chocolate chips
  10. 1 c caramel bits 
Instructions:
  1. Mix  flour, baking soda and salt, set aside.
  2. Beat butter and sugars together until creamy. 
  3. Add vanilla and eggs one at a time to butter mixture then gradually add in dry ingredient mixture.
  4. Stir in chocolate chips and caramel bits. 
  5. Roll into logs, wrap in wax paper and chill in fridge until firm.  
  6. Slice chilled logs into cookies and bake in 350 degree oven for 12-14 minutes.
Tips:  
  • Replace dark chocolate chips and caramel bits with white chocolate chips and Crasins. 
  • Slice chilled logs into cookies and freeze sliced cookies in bags for later use.
