Appetizers & Sorbets: Stuffed Medjool Dates
A great starter for a meal or pick up at a cocktail party, I got the inspiration at a great little bistro/olive oil store "Taste of the Olive" in Wilimington, NC. I added the orange zest and liqueor to give it a balance with the chocolate balsamic. The proscuitto is just a bonus.
Ingredients
12 Medjool dates, pitted
4 oz. Goat cheese softened
1 tablespoon grated orange peel
1 teaspoon orange flavored liqueur
4 thin slices of proscuitto
Instructions
Combine cheese, orange peel and liqueur and mix well. Place in a pastry bag with small opening and pipe into the each date.
Cut each slice of proscuitto into three strips (long way)and wrap each date with one piece.
Bake in preheated 375 degree oven for approximately 8-10 minutes.
Optional (but recommended): Reduce chocolate infused Balsamic vinegar to syrup consistency and drizzle over the dates just before serving.
