Recipe of the Month - April 2015
Desserts: Palmier
This month's recipe is for the classic French sugar cookie. Easy to make and with mutliple variations the larger version is sometimes called "Elephant Ears". Pictured here at a recent special Tea we did, they are great with coffee in the morning or as an accompaniment at dessert.
Ingredients
1 sheet of puffed pastry
1 cup sugar
Instructions
Roll out the puffed pastry so that it measures approximately 11 x 17 (half a sheet pan). Sprinkle with ½ cup of sugar and roll with a rolling pin to incorporate the sugar into the dough. Turn over and sprinkle with remaining ½ cup sugar. Roll again.
Fold each edge in by 1/4, fold each edge again by 1/4. Fold left side over right side. It will create 6 layers. Cut roll into 1/4 inch slices and bake in 350 degree for 20 minutes turning after 10 minutes. Makes approximately 36 cookies.
For variations of the basic Palmier, add 1/4 cup cinnamon, cocoa or flavored sugars on second side before folding.
