Salads: Tomato & Fresh Mozzarella Salad with Fresh Basil and Balsamic Vinaigrette

Looking for a different salad presentation. This month's recipe is for an easy to prepare salad which we like to serve in a Martini glass. Use fresh basil of any variety for a wonderful zing. Give it a try it at your next dinner party.

Ingredients 
Grape tomatoes sliced in half
Fresh Mozzarella, cubed (Buffalo is the creamiest, but cow’s milk is good)
Fresh basil, snipped with scissors
Extra virgin olive oil
Sea salt (or Kosher)
Fresh ground pepper
Baby greens


Instructions 
There are no real proportions for this recipe, simply slice as many tomatoes and cube as much Mozzarella as you need to fill a Martini glass for each salad.


Sprinkle with salt and pepper, add olive oil and vinegar (usually twice as much oil as vinegar) and add basil.

Mix well, place a layer of baby greens in each glass and top with tomato mixture.
