Entrees: Pinchitos Morunos (Small Spicy Moorish Kebabs)

In working on the menu for last month's wine tasting which centered around Spanish Tapas, I came upon a wonderful website of Spanish foods (www.spain-recipes.com). The recipe for these little pork tenderloin skewers is easy and they were gobbled up by those attending with repeated requests for the recipe.

Ingredients 
1 lb. lean pork, cut into small cubes (pork tenderloin works very well
2 garlic cloves, finely chopped
2 teaspoons salt
1 teaspoon mild curry powder or pinchito spice mixture
1 teaspoon Spanish paprika
1/2 teaspoon coriander seeds
1/4 teaspoon dried thyme
Freshly ground black pepper
3 tablespoons olive oil
1 tablespoon lemon juice


Instructions 
Crush the garlic with the salt in a morter and transfer to a small bowl then work in the other ingredients.


Marinate pork in a shallow dish with the herb mixture, turning to coat well for 2-3 hours.

Skewer the pork, 3-4 cubes on a small stick (if using wooden sticks, soak them in water for serveral hours before assembling and grilling).
Spread the pinchitos out on a barbeque and cook over high heat for 3 minutes on each side.
