Sesame Poppy Seed Spinach Salad with Glazed Salmon Fillet

This summer salad paired with the glazed salmon fillet is the perfect light dinner or lunch for these hot August days.

Ingredients:
(Sesame Poppy Seed Spinach Salad)
1/2 cup olive oil
1/2 cup brown sugar
1/4 cup white balsamic or prosecco wine vinegar
2 tbs. sesame seeds
1 tbs. poppy seeds
1/4 tsp. paprika

(Glazed Salmon Fillet)
2 1/2 to 3 lb salmon fillet
Soy sauce for rubbing the salmon

Instructions:
  1. Preheat broiler. Rinse and pat salmon dry. 
  2. Arrange salmon, skin side down, on a foil-lined jelly-roll pan and rub thoroughly with soy sauce. 
  3. Season salmon with salt and pepper and broil about 4 inches from heat for 12-15 minutes, or until just cooked through.  
  4. While salmon is under the broiler, whisk all salad ingredients together thoroughly.  
  5. Toss dressing into spinach. 
*Hint:  add additional salad toppings as desired (toasted almonds, peaches, avocado, berries of your choice, etc.)
