A galette is a classic french tart or round flat cake made with flaky pastry or yeast dough and topped with sweet and savory items such as fruit, jams, meats etc. You can modify this basic recipe as you wish with many types of fillings. We particularly like this one with a drizzle of honey and a raspberry sauce on the side as a delicious and simple dessert for a fall evening.

Ingredients 
1/2 package frozen puff pastry sheets, thawed (17 ounces)(6 sheets)
parchment paper
1 pounds peaches (can also use nectarines) cut into 1/4 inch slices
3 tablespoons sugar
1/8+ cup honey
raspberry sauce


Instructions 
Preheat oven to 425 degrees. Cut pastry sheets into 3 inch squares and put on baking sheets lined with parchment paper in a single layer.


Place the peach slices on each pastry square and spinkle with sugar.

Bake for 15 to 20 minutes or until golden brown. Cool on wire rack for 5 mintues. Drizzle with honey and put raspberry sauce around the base.
