Recipe of the Month - January 2016
Desserts: Rustic Tart with Apples & Cranberries
Sous chef Jeff Grubb adapted another classic tart recipe for the holidays. Combining cranberries and apples with a rustic pastry make for a satisfying and surprisingly light finish for your dinner.
Ingredients
Pastry
1 1/4 c flour
6 Tbs unsalted butter
1 Tbs sugar
1/4 tsp salt
1 to 3 Tbs water
Filling
2 medium Gala apples
1/4 c. sugar
1 tsp cinnamon
1 Tbs corn starch
1/3 c dried cranberries
1/4 c chopped pecans
1 c whipping cream for pastry and for loose whipped topping.
Instructions
Pastry
Mix flour, sugar, and salt. Cut in butter till it resembles course meal. Add enough water to combine pastry. Wrap and chill. Roll into 12 -13 inch circle and place on a parchment lined pan, set aside to prepare filling.
Mix sugar, corn starch, and cinnamon. Peel, core and dice apples. Place in a bowl and mix in sugar mixture and cranberries.
Scatter over pastry leaving 2 inch rim. Sprinkle with chopped pecans. Working around the edge fold up the pastry pleating it as you go to form the top. Brush lightly with whipping cream and sprinkle with sugar, prior to baking.
Bake in a 350' oven for 45-50 min.
Serve with loosely whipped cream.
