Appetizers & Sorbets: Avocado, Cream Cheese & Smoked Salmon Bite

As the many of you who have dined at the Inn, know we serve a sorbet course in our own logoed shot glass. We now have another set of 36 small glasses and I got to thinking about how we could use them and decided to do a series of small appetizers in the glasses. We just happened to have a party for which I needed some new items on the menu and something light and summery. The recipe this month is for an avocado, cream cheese and smoked salmon bite. Try it at your next cocktail party.

Ingredients 
1 Ripe avocado
3.5 ounces smoked salmon
3 ounces cream cheese
3 teaspoons chopped chives
1 lemon
Cumin
Salt
Pepper

Instructions 
Grate the lemon zest and set aside. Cut the avocado, remove the seed and remove the pulp, cutting it up in chunks and place in a blender for food processor with juice of 1/2 lemon.


Season with salt, pepper and a little cumin and blend to desired consistency.
Rough chop the salmon and mix with the lemon zest and pepper to taste.

Finely chop the chives and mix into the cream cheese.

Layer a shot glass with the avocado on the bottom, then salmon and top with the cream cheese. You can add as many layers as desired. Finish with a little lemon zest on top.
