Orange & Red Onion Salad

Salads: Orange & Red Onion Salad
Serves: 4

It's almost the end of summer and this is a refreshing and tangy salad which is easy and quick to prepare (15 minutes). Always serve it chilled.

Ingredients 
4 ripe medium oranges, peeled
1 small red onion, sliced thinly
2 tablespoons raspberry vinegar
6 tablespoons extra virgin olive oil
4 tablespoons golden raisins, covered for 20 minutes in hot water, then drain
20 pitted olives
2 tablespoons sunflower seeds
2 tablespoons finely chopped blanched almonds
salt and fresh ground pepper to taste
fresh mint for garnish


Instructions 
Remove the white pitch from the oranges and cut crosswise into 1/4 inch slices


Arrange the slices on a serving platter and scatter the sliced onion over the fruit

Wisk the vinegar, olive oil and salt and pepper together in a small bowl

Spoon the dressing over the onion and olives and spinkle with the raisins, sunflower seeds and almonds and garnish with mint

Serve chilled
