Salmon Mousse

Recipe of the Month – December 2019


Last month we had an elegant French Food and Wine Dinner, as part of the celebration of our 25 years in business. The second or entrée course was a smoked salmon mousse and is a very easy recipe to prepare. With a little kick from the vodka, it’s very festive and would be a great contribution to your holiday dinner party.

Ingredients:
½ pound smoked salmon
½ pound cream cheese
1/3 cup chopped scallions
¼ cup finely chopped fresh dill
Juice of ½ lemon
Freshly ground pepper to taste
½ tsp group cumin
Tabasco to taste
2 tbs vodka (plain or lemon-flavored)

Instructions:
1.   Combine all the ingredients in a food processor or blender.  Blend to a fine puree.  Spoon and scrape the mixture into a serving dish.  Smooth the top. Chill
2.    Serve (cool, not cold) with buttered toast, chopped onion, and drained capers on the side.
Yield: about 4 cups
