Accompaniments: Carrots Vichy

Ingredients 
5 -6 carrots, peeled, and sliced on diaginal
2 tbs butter
2 tbs water
1 tsp sugar or to taste
salt & freshly ground pepper to taste
chopped parsley


Instructions 
Place all ingredients into a heavy saucepan with a tight fitting lid. Cook over high heat until carrots soften a bit and the sugar begins to caramelize. Sprinkle with parsley and serve hot.
